Indie Winemakers' Tasting Notes

Our mission is to provide unbiased opinions of the wine being offered. These notes come from up to 10 guests who tasted this wine in a blind tasting format (wine is concealed so their identity is unknown). Why this format? Tasting blind completely throws out any hype associated with a certain winery, style, price point, etc; it forces the taster to accept what is in the glass without any predetermined notions. Our guests utilize Robert Parker's Glossary of Wine Terms for their comments for consistency purposes. In addition, we utilize the wine aroma wheel to enhance one’s ability to describe the complexity of wine flavor. Notes are posted on this wine during the tasting to ensure they accurately reflect the impressions.

Tasting Notes

  • AA: This is a very nice wine. Concentrated flavors of dark cherry and black pepper. Very smooth - after some air time.
  • RLA: Strong and bold at first, but mellowed with some air time. A very long and good finish.
  • JC: Very dry and a bit harsh at first. My second taste was very different as the wine showed more fruit flavors.
  • TC: This is very big, dry red wine. The wine smoothed out over time. Lots of dark fruit flavors.
  • MA: This wine is almost black in color with strong legs in the glass. Nose and palate characteristics of cassis, chocolate and black pepper. There are subtle oak influences on this wine. The mid-palate to finish is extremly satisfying with a long finish. The high ratio of tannins to acid suggests this wine will benefit from additional cellar time.

Vintage Description

2004 was a unique season in many ways. Most of the vineyards had a pretty tough time of it with very little annual rainfall. Fortunately York Mountain is blessed by cooling fogs which revitalize the vines. It was a year for careful vineyard manipulation and irrigation timing. The major issue was crop management. With this in check, we were able to produce wines with wonderful varietal fruitiness.

The 2004 Cabernet comes from the Acclaimed Carver Vineyard in York Mountain. We have had a long term association with this old vine vineyard, farming and managing it ourselves. It is truly one of the jewels in the San Luis Obispo County area. The Reserve 2004 York Mountain is really a barrel selection of the finest new French barrels from this vintage.

Winemaker's Tasting Notes

The 2004 York Mountain Reserve Cabernet has excellent density to go along with its dark red, purple hues. The strong varietal definition this wine possesses leads to aromas of black currant, cherry, and cracked green pepper. The abundance of such forest fruits framed by attractive French oak and a soft texture that result in a full lingering finish. Enjoy now or cellar 3-15 years.
